A Kenyan Won the Race


A Honda Civic plastered in Kenyan flag stickers pulled into the race parking lot right behind us. Needless to say, he outran everyone participating by 10 or 12 minutes.

Climber


She's a climber. I have to constantly watch her...found her on the toilet tank the other day.

Indian Meal


We made an Indian meal last night in conjunction with the SOTW chapter on ancient India. Claire proclaimed that she likes Indian food more than American food. I concur--it was exceptionally good eating last night. Charles--this dish tastes just like your fav from The Oven, Kristen should make it for you.

Butter Chicken

6 chicken breasts
1 t garam masala
2 t coriander
3/4 t chili powder
1 t ground ginger
3 cloves garlic, minced
2 T vinegar
2 T tomato paste
1/2 c plain yogurt
3 T butter
1 large onion, chopped
4 cardamom pods, bruised
1 cinnamon stick
1 t salt
3 t sweet paprika
the rest of the tomato paste from small can
3/4 c chicken stock
1 c half and half

Cube chicken. Combine ground spices, ginger, garlic, vinegar, paste and yogurt in large bowl, add chicken, coat with marinade; cover, refrigerate overnight. Heat butter in large pan, add onion, cinnamon and cardamom; cook, stirring, until onion is browned lightly. Add chicken mixture; cook, stirring, 5 minutes. Add salt, paprika, paste and stock; simmer, uncovered, 10 minutes, stirring occasionally. Add half and half, simmer about 10 minutes or until chicken is tender. Serve over rice or with fresh naan.
