Thursday - Beef Fondue, sauces - horseradish, BBQ, garlic & lemon vinaigrette, baked potatoes, salad
Friday - Spaghetti, salad
Saturday - Chicken casserole with wild rice (kid request - yuck!)
Sunday - Beef Roast, cauliflower with burnt butter sauce, green beans, bread pudding

Will you still be my friend if I tell you the chicken casserole sounds kind of good? :o I don't know what variation you're making, but I've found some of those Campbell-y required soup recipes are pretty tasty if you make your own version of the soup part (chicken broth, flour, milk, etc. for cream of chicken soup, etc.).
Can you tell me about burnt butter sauce? Sounds interesting.
Just melt a few tablespoons of butter in a saucepan, burn it and pour on top of the vegetables. The butter takes on a nutty flavor. It is very good.
What kind of freak food is butter? Even burned it's delicious.
So how do you only plan one meal a day? I have to plan three! Even if I simply write "cereal" for breakfast - but my family (if not the kids especially dh who doesn't like cereal to begin with) balks if there is cereal every day. Then there is dinner (aka lunch) and supper. I really should get back into planning, everything goes much smoother when I do.
We eat the leftovers from yesterday's dinner for lunch everyday. I'm sure that in the future I will have to plan more than one meal daily. I have already noticed myself making more side dishes or a bigger recipe so there are leftovers for the next day.
